One Week in the Books

By one week, I’ve actually been getting accustomed to this new way of eating, which is definitely something I had hoped would happen.  My energy levels still seem a little lower than usual and my stomach still isn’t perfect, but I’m less bloated and having fun with trying new foods.
 

Friday night I decided to make up my own Vegetable and Sausage Bake recipe.  It was simple, but turned out really well!

Ingredients:

  • 1 Sweet potato
  • 1 Green bell pepper
  • 1 Yellow onion
  • 2 Turkey sausages
  • 2 Bay leaves
  • Seasoning (I used Whole Foods Toronto Steak & Chicken Rub)
  • Extra virgin olive oil

Directions:

Slice up the veggies and sausage, mist on the olive oil, add the seasoning and two bay leaves, then bake at 375*F for 40 minutes in a covered pan.

This morning I was up early to get schoolwork done, and started out with a bowl of Paleo Trail Mix, sliced bananas, frozen blueberries, almond butter, and almond milk.

Thanks so much for posting about this. It’s totally inspired me to cut out grains and sugar and what not. I’m not sure I’m actually doing the Whole30…..yet, just because of my family. But I’m putting us in that direction.

I love that Whole Foods has many paleo options, they even started carrying a paleo bread.
